Sweet Potato & Marshmallow Casserole

It's almost Thanksgiving, so I practiced on a side dish for the dinner. I'm not going to make a stuffed turkey, maybe next year.

The side dish is so sweet, that at first we thought it was a dessert. Here's a recipe that serves about 8.

Ingredients
3 large sweet potatoes
3/4 cup granulated sugar
2 eggs
1/2 cup melted butter
1/3 cup milk
1 teaspoon vanilla aroma
You can add raisins or cranberries too if you like.

Ingredients for the streusel topping
1/3 cup light brown sugar
1 cup chopped pecans
1/3 cup all-purpose flour
1/3 cup softened butter
marshmallows

Instructions
1. Preheat oven to 350 F. Meanwhile cook the sweet potatoes (+- 15 minutes) and cut them into small pieces. Mix the cooked sweet potatoes, granulated sugar, eggs, 1/2 cup melted butter, milk and vanilla until it's smooth. Spoon into a greased 1 1/2 quart casserole.

2. Now make the topping: combine brown sugar, pecans, flour and 1/3 cup of softened butter in a bowl. Stir with a fork until crumbly (I prefer to use my hands for this). Sprinkle topping over the sweet potato mix in the casserole.

3. Bake about 15 minutes and take it out to sprinkle the marshmallows over the topping.

4. Bake another 10 minutes until marshmallows are lightly brown.
